Sweet Potato and Oatmeal Biscuits

 


1 large sweet potato, cooked and mashed (about 1 cup)

2 cups rolled oats (blended into a coarse flour)

1/4 cup unsweetened applesauce

1/4 cup water

1/2 tsp cinnamon (optional)


Preheat your oven to 350°F (175°C).


Blend oats to a coarse flour consistency.


Mix the mashed sweet potato, oat flour, applesauce, and cinnamon.


Gradually add water until you form a dough.


Roll out to about 1/4 inch thickness and cut into shapes.


Bake for 30-35 minutes. To make the biscuits harder, lower the temperature to 200°F (93°C) and bake for an additional 30 minutes.


Cool thoroughly before storing.


Storage: Store in an airtight container for up to 3 weeks or freeze for several months.
