1 1/2 tablespoons Avocado Oil
1 Medium Yellow Onion, Diced
2 Cloves Garlic, Minced
1 1/2 Pounds Boneless, Chicken Breasts, diced
1 (15-ounce) can Black Beans, Drained and Rinsed
1 cup Frozen Corn
1 (16-ounce) jar Salsa
1 1/ teaspoon Chili Powder
1 1/2 teaspoons Ground Cumin
Salt and Pepper, To Taste
1 1/2 cup Low-Sodium Chicken broth
1 cup Long-Grain White Rice, washed
Brown onion in the oil.
Add garlic.
Add chicken and stir to brown.
Add the black beans, corn and salsa.
Add the seasonings.
Meanwhile cook the rice in the chicken broth in the microwave. 10-15 minutes depending on your microwave. Or use your method of choice.
Add the rice back into your pan with your meat and stir well. Heat through.
Serve in a bowl or fill a tortilla.
If desired, sprinkle with cheese.
